Our Cava is made from organically farmed grapes which pass through a sorting table with each variety then pressed separately. We use the free run juice and age the wine in Allier Oak barrels before bottling. Once the wine is transferred to the bottle for further aging, we suspend the lees through the "poignetage" method in order to produce enriched characters of flavors, aromas and other natural nuances.Cava Torelló is lively yet possess subtle fine bubbles. Citric notes on the nose are reminiscent of quince, orange peel and brioches.  On the pallet all the characteristics of a fine well aged cava come to life; toast, subtle vanilla, fresh acidity and a silky mouth feel rounds out it’s lasting elegant finish.

All the wines and sparkling wines from our cellar have their origin in the vineyards of Can Martin, the 135 hectares (321 acres), estate associated with the Torelló Family since 1.395.

Soil Profile
Mixture of clay and chalk which we keep poor in organic material and in which the different varieties of grape planted at different altitudes of the estate adapt perfectly, forming distinct microclimates.
Weather
Typically Mediterranean climate with mean annual temperature of 16ºC, a mean rainfall of 460 mm/year and rain concentrated in spring and autumn.
Harvest
Manual harvesting of the grapes at the optimum moment of maturity. Training of the grape-pickers so that they reject those grapes or bunches that may not be in good condition
Varieties
White varieties: Macabeo, Xarel.lo, Parellada, Chardonnay and Subirat Parent and Reds: Cabernet Sauvignon, Merlot, Pinot Noir and Syrah.
